Soup Pumpkin Chili

Serves 4

Sauté 1 chopped onion in 1 tablespoon olive oil for 5 minutes, then add 1 yellow pepper, diced 500g pumpkin and diced. Leave back another 5 minutes, add 200g cooked black beans, salt, pepper, cumin, chili and vegetable broth 75cl. Cook until vegetables are cooked and mix. Meanwhile, fry in a skillet another chopped onion with 1 tablespoon olive oil for 5 minutes, add green pepper and diced red and bake 10 minutes more. Stir in 500g of minced beef meat and cook 5 minutes, ajutez 200g cooked black beans and 350g of tomato sauce (I used a fairly thick with chunks). Season with salt and pepper and add a little chili, cumin and coriander. Cook until meat is well done. Serve the soup with meat on top. Voila!



Pumpkin-chili soup

Serves 4

Sauté 1 minced onion with 1 tbsp of olive oil during 5 min, then add 1 diced yellow bell pepper and 17.5oz of diced pumpkin and let cook 5 min. Add 7oz of already cooked black beans, salt, pepper, cumin and chili powder and 3 cups of vegetable stock. Cook until the vegetables will be cooked and blend. Meanwhile, sauté another minced onion with 1 tbsp of olive oil during 5 min, add 1 green bell pepper and 1 red bell pepper, both diced, and cook 10 min. Add 17.5oz of minced beef meat and let 5 min more to cook. Then add 7oz of cooked black beans and 12oz of tomato sauce (I used a thick one with chunks), salt, pepper, chili powder, cumin and coriander powder, and cook until the meat will be done. Serve the meat over the soup, and it is ready!

Lasagna vegetable curry

Serves 6 1 large onion

250ml coconut milk
Curry, coriander powder, paprika, cumin, salt and pepper
1 tablespoon olive oil 1 tablespoon cornstarch

Grill the vegetables (except peas) in a greased baking dish for 45 minutes - 1 hour at 180 * C. Mix the vegetables with coconut milk, peas and spices. Repeat it once again and finish with another layer of noodle, some tomato sauce, the béchamel and then, some cheese. Bake 45 min at 180*C.

4 small eggs (or 3 large ones)
1 pound of chestnut spread
1 cup of flour

1 onion 2 tbsp olive oil 500g pumpkin

400g drained lentils
25cl milk Coconut Curry
, 4 spices, paprika, salt, pepper
125ml apple juice 1 tbsp
cider vinegar
375ml vegetable stock

fry the onion in oil for 5 minutes, stir in pumpkin into cubes and let cook 5 minutes. Add the lentils, pour coconut milk, seasonings, apple juice, vinegar and broth. Simmer until the pumpkin is cooked, then mix and voila!
